Ingredients:
We recommend trying to source organic ingredients for the below where you can – for your health and that of the planet’s too.
Two Pukka Winter Warmer tea bags
One ripe banana
Two tbsp coconut oil
Three tbsp tahini
60g maple syrup
One tsp cinnamon
45g mixed seeds
125g rolled oats
50g nuts of your choice (we like walnuts and pecans)
Method:
Preheat the oven to gas 6/200°C/fan 180°C and boil a kettle.
Steep two Pukka Winter Warmer tea bags in half a cup of boiling water for 10 minutes. Pour into a heatproof bowl with the oats and allow to soak for 15 minutes minimum.
Meanwhile, mash the banana to a smooth paste with a fork.
Melt the coconut oil over a very low heat.
Once melted remove and add the tahini and maple syrup.
Mix the dry ingredients in a bowl plus a pinch of salt. Add the oats, banana paste and maple syrup mixture. Stir until combined.
Press into a lined 16cm x 16cm tin. Bake for 25-30 mins, or until firm and golden.
Leave to cool in the tin for five mins, then for a further five mins on a cooling rack, before slicing into 12 bars.
Serve with a mug of Winter Warmer tea!
